Welcome to part 3 of “how do two people eat an entire watermelon before it goes bad”? The answer? Make fancy watermelon bites! Or canapés if you’re getting really fancy!

It’s quite the challenge, attempting to finish off a watermelon that’s probably bigger than my torso. Even with the valiant assistance of Mr Meatified. But before I resorted to blending the thing up and making either (a) smoothies or (b) cocktails – guess which one of the two options happened! – I figured I should try a few more edible things first. If you’ve ever googled watermelon recipes, you’ll know that approximately 300% of them will pair this refreshing fruit with feta. I get it: I’m not above a classic salty + sweet combo. But when you’ve already eaten more Watermelon Caprese than should be humanly possible, the thought of another watermelon-cheese-a-thon is not cheering.
While I was making that Watermelon Caprese, though, I took a look at the little circles I had been cutting out with cute 2-sided cookie cutters and figured that they would make perfect little pre-dinner bites with the right topping. I wanted to keep these watermelon bites Paleo, which meant cheese was out. But I also wanted to keep a little of the inherent saltiness which makes the watermelon-feta-standard so tasty. So instead, I made an avocado cucumber salsa to satisfy the creamy texture usually coming from the cheese and then dressed it very lightly with a splash of coconut aminos to keep the salty element that works so well. I balanced everything out with a squeeze of fresh lime juice – that little bit of acidity makes everything pop!
You can serve these adorable little watermelon bites with drinks as pre-dinner nibbles, or make them as a slightly unexpeccted appetizer. You could even make it easier on yourself by simply tossing some cubed watermelon in with the avocado cucumber salsa if you’re feeling a little less like cutting out shapes and just want a nice light lunch or side. However you have them, these watermelon bites are definitely a keeper!

These adorable little watermelon bites are topped with an avocado cucumber salsa dressed lightly in coconut aminos and fresh lime. Refreshing and delicious!

Ingredients
- 3 – 4 slices of a large watermelon, about 1/3 inch thick
- 1 small avocado, diced
- 1/4 cup red onion, diced finely
- 1/2 cup cucumber, diced finely
- 1 tsp coconut aminos
- Squeeze of fresh lime juice
Instructions
- Use a 2 inch cookie cutter to create about 20 watermelon circles.
- In a bowl, combine the avocado, red onion, cucumber, coconut aminos and lime juice. Stir through.
- Use a teaspoon to top the watermelon circles with the avocado salsa.
- Serve immediately.
This is funny because I buy giant watermelons just for me to eat. As far as I’m concerned 1 serving = half watermelon. When my husband asks for some I usually tell him to get his own watermelon.
I don’t think I even saw a whole watermelon until a few years ago. Growing up, you could only ever buy them in slices! I can’t stop giggling at imagining telling someone to get their own watermelon – I think that will be my new response when Mr Meatified asks for any of my favorite foods from now on! 🙂
