Mixed Berry Chia Jam

I used to make a lot of jam back in my pre Paleo days. It was a great way to use up fruit and made cute little personal gifts throughout the year. Back then I obviously still used sugar and commercially produced pectin, though. Yuck. This Mixed Berry Chia Jam doesn’t need either of those things!

No commercial pectin is a good thing, since lots of brands have ingredients like added dextrose (no thanks, hidden sugar) or citric acid in them – as well as preservatives. Citric acid that is added to foods is almost always derived from corn products – and most corn is GMO, so it’s something I would like to avoid. Instead, this Mixed Berry Chia Jam is thickened with… the chia seeds, so there is no need to add pectin. The other bonus of this chia seed-thickened method? It’s super fast! No need to watch a near-boiling pan of fruit and sugar for ages like I used to.

I personally chose not to add any additional sweetener to this Chia Jam and instead added a little vanilla extract. I contrasted the natural sweetness of the fruit with some fresh lemon juice, too. Feel free to add a little raw honey to yours at the end if you would like it a little sweeter, though.

A quick note on the chia seeds: I wanted to make this version of Chia Jam without the “bits” that you get with recipes that use the intact seeds as thickener. I used my Ninja blender (with it’s extra “top” blade) to process the chia seeds to a powder. You could also use a spice grinder or pre-ground chia seeds for the same results.

Mixed Berry Chia Jam

This is a “no-bits” version of chia jam using ground chia seeds. No added sweetener is needed and it has a fun kick from fresh lemon juice!

Instructions

  1. SIMMER: add the mixed berries and lemon juice to a saucepan. Simmer over medium-high heat until the fruit softens and begins to break down. Remove from the heat.
  2. BLEND: put the chia seeds into a blender and process until they are ground to a fine powder. Add the softened fruit and vanilla extract to the blender. Process until combined smoothly.

Notes

Makes just over 1 pint of Mixed Berry Chia Jam.

  1. Other option for sweetness would be to use stevia extract… way less calories that way. And you can buy stevia extract on Ebay but be sure to purchase the white powder rather than the green as it’s more concentrated. One quarter of a teaspoon is equivalent to a whole cup of sugar.
