One of my favorite restaurants ever is a snazzy Cuban place. The food there is simple and delicious, with plenty of dishes that are marinated or dipped in my favorite sauce… MOJO!
What’s Mojo? It’s made with plenty of fresh citrus juice and LOTS of garlic. Don’t be scared by the garlic, it’s awesome. I Mojo in this recipe to dress up “leftover” chicken from my big batch cooking sessions… which means these Mojo Chicken Avocado Cups are a quick and easy lunch or snack option. Trust me when I say Mojo makes this recipe – don’t skimp on it!
