Today I am super excited to tell you all about a recipe swap that I’m doing with Alex Boake, an insanely talented illustrator and comic book artist. Who just happens to food blog with a twist: she illustrates all her own recipes. Beautifully so, I might add! But what really, really sealed the deal in terms of my appreciating her awesomeness was her series of recipes and illustrations called “Fandom Foodie“. She takes characters from video games, movies and animation… then uses them as inspiration for a matching dish with fantastic accompanying illustrations. Amazing, right? We agreed to swap recipes: she would pick one of my recipes, make it and then illustrate it, while I would pick one of hers, make it and photograph it. This has been such a fun little project!

I had a LOT of trouble trying to narrow down a list of recipes from her site that I wanted to try. However, the one I kept coming back to was “Princess Peach” Baked Peaches. Partially because I can still remember how hard I tried to save the aforementioned Princess as a kid. I never did make it past 8-2. You know what else I never did? Learned how to play my NES without jumping everytime Mario jumped. True story. The other reason I wanted to fall face first into Alex’s Baked Peaches recipe was that it has such a novel combination of flavors: sweetness from the gently caramelized peaches, creaminess and a little tang from smooth goat cheese, plus the warmth of spices and heat of red pepper. I was sold!

I followed Alex’s recipe to the letter aside from substituting honey in place of the maple syrup, simply because I didn’t have any! I chose to mix up the spiced goat cheese filling and then pack it into a piping bag just to make the peaches look extra pretty by making goat cheese swirls. For presentation and once the peaches had rested a few minutes, I drizzled the peaches with a little extra honey and sprinkled lightly with red pepper flakes. Alex’s original recipe suggests topping with a little whipped cream, which would also have been delicious! I will readily admit that I made these believing that I would get to eat them all, since Mr Meatified has been telling me for YEARS that he doesn’t like either goat cheese OR honey. He ate 3/4 of these: if that’s not a recommendation for a recipe’s awesomeness, I don’t know what is! We ate ours as dessert, but these stuffed peaches would also be great as an appetizer, or – if you’re getting really swanky – as an alternative to the usually heavy cheese course.

Stuffed Peaches with Goat Cheese & Red Pepper

These stuffed peaches combine fruity sweetness with tangy, creamy goat cheese, warming spices and the heat of red pepper. Amazing as a dessert or appetizer! Original recipe by Alex Boake

Instructions

  1. Preheat oven to 350F.
  2. Set the peach halves on a metal pan, or glass baking dish. Bake peaches without the topping for 20 minutes.
  3. While they are baking, mix the goat cheese, maple syrup, cinnamon, nutmeg and red pepper flakes in a small bowl.
  4. After the 20 minutes are up, remove the peaches from the oven and divide the topping by four.
  5. Place a dollop of the goat cheese mixture into the depression made from removing the pit.
  6. Return the peaches to the oven and bake for another 10 minutes. Allow them to cool for a minute before plating.

  1. I can’t get over how delicious you made these look! Genius idea to pipe the filling, the presentation is so much better that way. Honey is probably even better than maple syrup in this since it’s a bit more neutral–I’m just Canadian and we tend to have maple syrup on hand!
    Yeah…I never beat Mario either, but I sure did try my hardest! It was the first console game I ever played. Ah, memories~
