I first discovered her over on Twitter, where her combination of all things grain free and ridiculously tasty collided with her hilarity. Over the past few weeks I have been researching (ad nauseum) the ins and out of every shade of Paleo. I am hypothyroid and insulin resistant sandwiched in PCOS (polycystic ovarian syndrome). It makes eating a tad more difficult because I also starting lifting heavy and training seriously. Trying to balance steady weight loss, hormonal stability and recovery is…interesting. I know for most of you that have autoimmune issues, you may share similar sentiments in trying to find what works for your body. Though I am still playing around with some elimination foods, I wanted to focus on what I CAN eat with an AIP shade of Paleo.

Challenge accepted.

Eggs have been my go-to sustenance for as long I can remember, sans the small widow of time where I had a lapse in reason and decided to be Vegan.

Breakfast being my favorite meal of the day, I wanted to create something that left out the #yolkporn (insert gasp here). It needed to be high in protein, big on flavor and well…easy to prep so I could have a morning staple for training days. The best part about breakfast food is that you never have to choose between sweet and salty. You can have both! Yay!

The blood orange. Have you used them? Seen them? They basically taste like an orange put on a sexy red dress. Sweeter, very fragrant and lots of fun to use in a variety of dishes. They’re in season where I live, and I can get them at a good price. If you can’t get your hands on one of these gems, then use what’s available to you or what you like best.

Ultimate Breakfast Meatcakes by Beyoutifully Delicious

What could be better for a ready to grab & go breakfast than… the meatcake?! Wrapped in bacon, portable & egg free, this is the Paleo breakfast of champs!

  • Yield: 14 meatcakes 1x

Ingredients

Scale
  • 1 lb ground sugar free pork sausage
  • 1 lb ground chicken breast
  • 14 strips of sugar free nitrate free bacon (its is optional but let’s be honest…you want it)
  • 1 medium apple (gala or granny smith)
  • Zest of 1 blood orange (you can sub citrus of your choice)
  • 6 oz. blackberries
  • 1 tsp. cinnamon
  • 1 tsp. salt
  • 1 tsp. black pepper {omit if on elimination phase of AIP – Rach}
  • 1/2 tsp. garlic powder
  • 1/21 tsp. rosemary (use 1 if you’re using fresh)
  • 1/21 tsp. thyme (use 1 if you’re using fresh)

Instructions

  1. Preheat oven to 375 degrees.
  2. Dice apple in small cubes.
  3. Using cupcake pans, Line each cup (up to 14) with bacon, creating a circle or nest to hold the meat.
  4. In a mixing bowl, add sausage, chicken, spices, apple, zest and blackberries.
  5. Here’s the fun part, with clean hands smash it together, mixing well.
  6. Fill each bacon lined cup with meat until you’ve filled 14 cups.
  7. You can top each with additional blackberries.
  8. Bake 30-35 minutes. If bacon is not done enough for you, then you can switch to the broil for 3-5 mins at the end for crisping the bacon. Just keep an eye on it. You know how crazy broilers can get.
  9. There will be a lot of fat in the pans, using a fork take each muffin out and set them on a paper towel lined plate for draining excess. Save the liquid gold in those pans for future use.
  10. You can add pinches of more zest when they come out of the oven. I like to serve these with roasted white sweet potatoes post workout.

  1. So I’ve made this recipe exactly as called for and it’s great! Second time I skipped the bacon, it’s still great.
    To mix it up (and bc my store had no blackberries) I used raspberries. Omg. Even better! Who knew meat and fruit could be besties?
