“Butternut squash is naturally very sweet. I had tried every sweet preparation out there and one afternoon while I was wrestling with cutting one up, (Why does cutting a butternut squash require the strength of a body builder?) I realized I was sick of sweet. I had a shallot and some rosemary on hand and this recipe came of it. I wonder how many recipes are inspired by being sick of something. I’m guessing a lot!”

Shallot & Rosemary Roasted Butternut Squash {AIP}

  1. Preheat oven to 400 degrees. Put diced squash in a large bowl and drizzle with oil. Add shallots, rosemary and salt. Stir to coat.
  2. Spread squash in a single layer on a baking sheet. Roast 30 minutes, stirring halfway through for even browning. Serve and enjoy!
