Hey all! I’m so excited to be blogging here on Meatified today! Rach’s food pictures always catch my eye, and I can’t get over her awesome recipes. It is officially Spring, which means lots of great things: warmer weather, longer days and farmers markets. When I lived in Southern California, I was spoiled by year-round farmers markets. Now that I am back in the Midwest, I’ve been counting down the days until my local market opens. I still have a couple weeks left until opening day but wanted to create a dish full of farm fresh produce. Thankfully my grocery store keeps local produce stocked.

Recently I’ve been wanting to spiralize everything! I’m a little late to the spiralizer party, but better late than never. In college, I pretty much lived off of pasta. I still remember cooking penne in an electric kettle in my dorm then dosing it with alfredo from a jar. Today I’d take a big bowl of zoodles or spaghetti squash any time over regular pasta! I recently discovered white sweet potatoes. The flavor is much more neutral than their colorful orange counterpart. These sweet potato noodles provide the perfect base for this veggie filled sauce.

Spicy Italian Pasta

This vegetable noodle based Spicy Italian Pasta dish will give you all the flavor but none of the gluten-ache of the original dish!

Ingredients

  • 1 white sweet potato, peeled and spiralized {use a spiralizer like this}
  • 2 large spicy italian sausage links, about 3/4 pound
  • 2 tsp ghee
  • 1/2 small onion, sliced
  • 2 garlic cloves, minced
  • 1 small red bell pepper, cored and thinly sliced
  • 10 asparagus spears, ends cut off and cut into 1-in pieces
  • 14 oz can fire-roasted tomatoes
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper
  • 1 tbls olive oil

Instructions

  1. Melt ghee over medium-high heat in a large flat-bottom skillet. Remove sausage casing and crumble into pan in small chunks. Let brown for a couple minutes then remove to a bowl.
  2. Add the onion and garlic to the sausage drippings. Cook for 5-7 minutes until onions are translucent. Next add in the bell pepper and asparagus. Cook for about 10 minutes until veggies are tender.
  3. Next add in the tomatoes, salt and pepper. Use a wooden spoon to scrap up all the flavor bits from the bottom of the pan. Bring the mixture to a simmer for 1 minute then reduce heat back to medium-high.
  4. Toss in the sausage and spiralized noodles. Use tongs to fully incorporate the noodles with the sauce. Cover and cook for another 5-7 minutes. Finish with a drizzle of olive oil.

Notes

If you don’t have a spiralizer, you can use a potato peeler to create thin noodles.

    1. Sorry, I don’t count or track that stuff myself. You could put it into an online nutritional tool like My Fitness Pal to get an idea.

  1. Tried this recipe a few nights ago, both my wife and I love it, 10 out 10. Could not find white sw potato, used reg. orange.
    Re-heated left-overs was just as good. Added homemade hot sauce was even better.
    Pot-luck dinner coming up and will use this dish and share with other.
