Arugula with Strawberry Rosemary Dressing
Summery and simple, this dressing takes seconds to make and brightens up any salad greens, but is especially delicious with peppery arugula.

Ingredients

- 1 packed cup of chopped strawberries
- 1 tbl extra virgin olive oil
- Juice of 1/2 lemon
- 1 tsp minced fresh rosemary (about 2 sprigs)
- 1/8 tsp salt
- Pinch of black pepper (omit for AIP)
- 1 tsp poppy seeds (omit for AIP)
- 4 – 6 cups arugula leaves
Instructions
- Add the strawberries, olive oil, lemon juice, rosemary, salt & pepper to a mini food processor or blender. Chop until combined and smooth.
- Optional: stir in poppy seeds.
- Divide the arugula between 4 side plates and drizzle with dressing.
