BLT Bites

Cute bitesize riff on the BLT sandwich. Makes 24 bites – great served with a side of mayo for dipping.


  • 4 slices of bacon
  • 1224 cherry tomatoes
  • 34 leaves crunchy lettuce such as Iceburg or Romaine


  1. Cook bacon until just crisp, but soft enough to pierce with a toothpick without cracking or breaking. Drain on a paper towel and let cool.
  2. Cut off any non-crisp lettuce from the leaves. Cut into inch wide strips.
  3. Once cooled, slice the bacon into inch long pieces.
  4. EITHER: Thread half a cherry tomato onto the toothpick first, followed by a square of bacon and a folded strip of lettuce. Finish with another cherry tomato half.
  5. OR: Thread on a square of bacon first, followed by a folded strip of lettuce. Finish with a cherry tomato half at the end.
