This nightshade free Mango Guacamole has just the right amount of sweetness to liven up almost any meal! Quick, simple and compliant with autoimmune Paleo!

Ingredients

Scale
  • 2 large avocados
  • 1/4 cup fresh cilantro, chopped
  • Juice of half a lime
  • Pinch of salt
  • 1 mango, peeled and diced

Instructions

  1. Remove the pit from the avocados and scoop out the flesh into a bowl. Mash with a fork, leaving some bite size pieces of avocado.
  2. Add the cilantro, lime juice, salt and mango. Stir to combine & serve!
