Paleo Hummus with Roasted Red Pepper

This no-bean paleo hummus has all the flavor & texture of traditional hummus, with extra flavor from roasted red peppers and smoked paprika.

Instructions

  1. Add the raw cashews, tahini and garlic cloves to a mini food processor or blender and process until the mixture is a thick paste.
  2. Add the lemon juice, olive oil, salt and cumin and process to combine.
  3. Add the coconut milk, roasted red peppers and smoked paprika. Process one final time until the peppers are the consistency you like.

To serve:

  1. Spoon the hummus onto a plate or into a bowl. Drizzle with olive oil and sprinkle extra with smoked paprika to finish.
