Vanilla Peach Preserves from Nourished App

Simple Paleo Peach Preserves – no added pectin required! Makes 2 8 oz jars. Adapted from a recipe by Nourished App.

Ingredients

  • 2 lb peaches {original recipe calls for 1 1/2 lb peaches & 1/2 lb strawberries}
  • 1/2 cup raw honey
  • 1 tsp lemon juice {I used the juice of half a lemon}
  • 1/2 vanilla bean

Instructions

  1. Peel the peaches by placing them in a pot of boiling water for 30 seconds to a minute to loosen the skins. Remove from the water and the skins should easily come off. Cut the peaches into several pieces and remove the pit. Place the peaches in a large pot.
  2. Add the lemon juice and raw honey to the pot.
  3. Using a small paring knife, slice the vanilla bean down the center and scape the seeds into the pot.
  4. Cook the mixture over medium-high heat, stirring frequently, until it starts to boil.
  5. Turn the heat down to medium and let cook for approximately 45 minutes to an hour, stirring occasionally. Be careful not to let the bottom of the mixture burn.
  6. The mixture should cook down to a thick, gooey mass and when it looks like jam it is ready.
  7. When done, you can put it in a jar and enjoy right away, freeze it for later, or can it.
