Light & Bright Green Broth Smoothie

(Want to know how I meal plan a month in minutes? Here's how!)

A twist on the typical green drink, this boosted green broth smoothie from https://meatified.com skips milk & added sugars for hidden veggies & a light, refreshing-not-bitter flavor.

The reasoning behind this green broth smoothie is pretty simple: I wanted to find a way to make a not so typical twist on the classic green smoothie, without any coconut products or added sugar.

But I also wanted it to keep it light and bright, avoiding the bitterness of some green smoothie blends, while still not making it too sweet.

Enter the green broth smoothie!

In place of coconut or other plant milks, I swapped in a mild flavored, but collagen rich chicken broth. Honestly, at first I was certain this was gonna be a dud, because, well, without the typical banana-heavy sweet smoothie base, how was I gonna hide that broth?!

But, this green broth smoothie really works. The broth & the fiber from using whole fruits and vegetables makes it more satiating than a typical sweet smoothie. The surprise hidden veggies – zucchini & romaine –  are neutral in flavor, which helps to balance out the savoriness of the broth, while the green apple & pineapple help tilt things to the smoothie side of flavor town.

If you’re used to green smoothies already, you can sub in spinach for the romaine for an extra nutritional boost, but if you’re weaning off the sugary smoothies, the romaine is more neutral and palatable.

A pop of fresh lime and mint at the end really brings everything together and before you know it… you’re drinking broth for breakfast. Go figure!

  • Total Time: 5 minutes
  • Yield: 2 - 2 1/2 cups / 480 - 600 ml
  • Category: smoothies, breakfast
  • Method: blender

Ingredients

  • 1 cup / 240 ml chilled bone broth, frozen in cubes if your blender can handle it
  • 1 cored, unpeeled & sliced green apple
  • 3 oz / 85 g unpeeled zucchini, about 1 small or 1/2 medium
  • 1 packed cup / 60 g sliced romaine heart or spinach, romaine is milder
  • 1/2 cup / 80 g frozen pineapple
  • 1 tbsp / 15 ml fresh lime juice, from 1/2 lime
  • Couple springs of fresh mint leaves, optional

Instructions

BLEND: Add all of the ingredients to a blender and blend until smooth. If your broth or vegetables aren’t frozen, you might want to add a couple cubes of ice to further chill the green broth smoothie to your liking. Best when freshly made as the color will darken after a night in the fridge.

Notes

The final flavor of the green broth smoothie will obviously depend on the flavor of your broth. I prefer to make these with chicken or pork broth as they’re more mild & to use a broth that isn’t strongly flavored.

I have tested this with both conventional boxed broths and with homemade, unsalted broth. The recipe works just fine with both, but using homemade and unsalted broth if you can will give you the most neutral flavored base.

You’ll get the best and most refreshing green broth smoothie if everything is chilled or even frozen. You can chop the veggies & fruits ahead of time and then freeze them in ready to go baggies for speedier mornings. If your blender can handle it and you like your green broth smoothies really cold, I recommend freezing your broth in ice trays so that you can add the frozen broth to your blender in cubes.

Start out with 50:50 broth to water if you’re feeling a little unsure about this whole green broth smoothie idea! Or you could add a smidge of banana for extra sweetness as counterbalance if you need it.
