This Berry Fizz Mocktail reminds me a little of sangria, except without the not-so-nice aftereffects of day drinking.
It uses a combination of tart cherry juice, pomegranate juice and fresh raspberries and lime – finished off with a some sparkling water for fizz – to create a not-too-sweet, refreshing summer drink with just a hint of sour. It’s a little moody to look at, but that’s just the gorgeous natural color of the cherry and pomegranate juices: this Berry Fizz Mocktail looks like a fancy cocktail when dressed up with a slice of lime and a few extra raspberries to finish!
Now, you could rustle this up in a fancy cocktail shaker, but I’m a big fan of the humble wide mouthed mason jar. It’s easy to pop all the ingredients into a mason jar, throw on a lid, give everything a good shake together and then serve in the same jar. Less fuss, no mess and your Berry Fizz Mocktail is served!
Berry Fizz Mocktail {Paleo, AIP}
- Yield: 1 serving 1x
Ingredients
- 8 raspberries
- Squeeze of fresh lime juice
- 3 oz / 90 ml tart cherry juice
- 2.5 oz / 75 ml pomegranate juice
- Sparkling water
Instructions
- MUDDLE: Add the raspberries and lime juice to a pint sized mason jar and use a cocktail muddler (or the back of a spoon!) to gently press the raspberries into the lime juice.
- MIX: Add the tart cherry and pomegranate juices to the jar. Put the lid on the jar and add a few ice cubes – shake to combine and chill the juices. Remove the lid, then top the drink off with sparkling water. Garnish with a few extra raspberries and a lime slice before enjoying!
