Green onions, spring onions, scallions… whatever name you use to describe the pretty, delicate allium, you are bound to love this Green Onion Dressing!
If you’re doing a Whole30 right now, you may already be a little bored by your salad dressing choices. Olive oil & vinegar combos can get a little dull. But this Green Onion Dressing will liven things up nicely, without any dairy needed! Hurrah!

The trick to thickening up this Green Onion Dressing is a combination of raw cashews and coconut milk. The coconut milk adds the creamy element without needing to resort to Whole-30-banned dairy ingredients and the raw cashews help to thicken it up so it isn’t as runny as plain coconut milk is on its own.
The flavor of this Green Onion Dressing is light and refreshing despite its creamy base because of the fresh green onions themselves. They add just enough of a tang without being overwhelming, which makes this Green Onion Dressing perfect for dressing simple greens or for topping off a more filling salad, like the Ahi Tuna version I’ve shown here.
A word of advice – like all dressings made with coconut milk, this will thicken up when it is refrigerated because of the natural fats in the coconut. If it ends up too thick to pour, you can simply re-blend it back to a dressing-like consistency.

This Green Onion Dressing is a Paleo-friendly creamy dressing that doesn’t need dairy. It’s also Whole 30 compliant.

Ingredients
- 1/2 cup raw cashews, soaked, drained & rinsed
- 1 cup coconut milk
- 1/4 cup green onions, chopped finely
- 1 tbl fresh lemon juice
- 1 tsp garlic powder
- Real salt & pepper to taste
Instructions
- Add the raw cashews to a blender and process until they are finely ground.
- Add the coconut milk, lemon juice and garlic powder to the blender. Blend until the mixture is smooth – you will need to scrape down the sides a few times to make sure everything combines nicely.
- Stir through the green onions and season to taste with salt & pepper.
Notes
This recipe is Whole 30 compliant – yay!
If the Green Onion Dressing thickens too much when refrigerated, just re-blend to a pourable consistency again.

How long do you typically soak cashews?
At least an hour and up to overnight — just don’t forget about them in the fridge, because they can and will grow mold if left in water longer! — Rach
