This is a quick breakfast I threw together the other day, using some leftover meatballs. All I did was sauté up some onions, poblano peppers and coleslaw mix and top the veggies with the meatballs. Of course, I don’t consider breakfast to be breakfast without some avocado, so I finished my plate off with some guacamole, which went really nicely with the slight kick of the meatballs. The cabbage and meatball combination reminded me of a kind of inside out, lazy person’s version of cabbage rolls, hence the name 🙂
