Shallot & Rosemary Roasted Butternut Squash

Guess what? There’s a new autoimmune protocol resource in town!

Today I get to tell you all about The Alternative Autoimmune Cookbook from Angie at Alt-Ternative Autoimmune AND share a recipe from the book with you. Yay!

Unlike other AIP cookbooks, Angie doesn’t just cover the elimination phase of the AIP. While there are plenty of 100% strict AIP recipes within the book, she has also included recipes that fit into later reintroduction phases, which is awesome. That feature says a lot about the book as a whole: it’s not just a cookbook, it’s an AIP guide. And I don’t just mean in terms of the food do’s and don’ts of the AIP. Angie has created a book that takes you through all stages of the AIP and that tackles the emotional issues and hurdles that we have to navigate, too. It’s not just about the food.

Because Angie has been there herself, she really gets it. As a certified health coach, she knows how to guide and support people through their diagnoses and beyond. And that comes across in The Alternative Autoimmune Cookbook: reading this book is like speaking to a friend. You know, the one that’s always been there for you and will drop everything to help you out when you need her. Woven through the book and in between delicious recipes and gorgeous photographs are inspiring stories that deal with the emotional struggles and the reality of living with – and healing from – autoimmune disease. This is the book for you if you’re looking for support, guidance and inspiration on your healing journey.

And now, a sample recipe! Here’s what Angie had to say about this beautiful Shallot & Rosemary Roasted Butternut Squash:

“Butternut squash is naturally very sweet. I had tried every sweet preparation out there and one afternoon while I was wrestling with cutting one up, (Why does cutting a butternut squash require the strength of a body builder?) I realized I was sick of sweet. I had a shallot and some rosemary on hand and this recipe came of it. I wonder how many recipes are inspired by being sick of something. I’m guessing a lot!”
