Last night I made my Moroccan Cod recipe again, but served it on top of some roasted Delicata squash instead of broccoli. I kept some of the squash back to make this salad for lunch today and it was delicious!
If you don’t happen to have any roasted Delicata squash around, it’s easy to make some! No need to peel them, just de-seed and then chop into thin semicircles. Toss in a little oil and seasonings of your choice, then lay out on a baking tray at 400F for about 20 minutes, until they are tender. You can also crisp them up by leaving them in a little longer if you prefer.
