Arugula with Strawberry Rosemary Dressing

Strawberry Rosemary Dressing: also known as summer on a plate! You know how sometimes that plate you fixed for dinner just needs a little something extra to really make it a meal? This simple side salad is that something. All you need is a few minutes to throw a couple of fresh ingredients in a blender or mini food processor to make a summery dressing that makes greens sing! You would think that using strawberries as a base for a dressing would produce something overly sweet, but the ripe fruit is balanced out with some acidity from fresh lemon juice and then rounded out beautifully with the herbal tones of fresh rosemary. Strawberries with fresh rosemary isn’t a combination you see too often, but you really should: it’s like the grown up cousin of the standard strawberry-basil pairing. The poppy seeds are really optional, I just think they’re pretty! Go ahead and leave them out if you’re following Autoimmune Paleo. You can use this dressing on pretty much any salady greens, but the peppery bite of arugula is especially delicious.

Arugula with Strawberry Rosemary Dressing

Summery and simple, this dressing takes seconds to make and brightens up any salad greens, but is especially delicious with peppery arugula.

Ingredients

Scale
  • 1 packed cup of chopped strawberries
  • 1 tbl extra virgin olive oil
  • Juice of 1/2 lemon
  • 1 tsp minced fresh rosemary (about 2 sprigs)
  • 1/8 tsp salt
  • Pinch of black pepper (omit for AIP)
  • 1 tsp poppy seeds (omit for AIP)
  • 46 cups arugula leaves

Instructions

  1. Add the strawberries, olive oil, lemon juice, rosemary, salt & pepper to a mini food processor or blender. Chop until combined and smooth.
  2. Optional: stir in poppy seeds.
  3. Divide the arugula between 4 side plates and drizzle with dressing.

  2. I have to say, I just started the Paleo diet (yesterday) and all of my life I have only ever liked ranch salad dressing. But I love strawberries and when I found this recipe online I thought I’d give it a try. I just made the dressing and..I love it. It is delicious. Sweet and tangy and fresh and perfect for livening up an otherwise plain salad. Thank you for posting this!
