Pork Belly Carnitas
This recipe makes ridiculously tender hunks of pork belly goodness, with very little hands on effort required. It goes perfectly with my (nightshade free) Mango Guacamole!
Zucchini Noodles with Seared Petite Scallops & Bacon
A light, fresh but flavor packed dish that gets bonus points for it’s minimal ingredients and quick prep time. Plus – bacon! Duh.
Grain Free “Cous Cous” Salad with Baby Kale & Artichoke Hearts
That’s not cauliflower, folks! See if you can guess what the “cous cous” base ingredient is!
Creamy Leek & Salmon Soup
I need to make more seafood soups. I wouldn’t usually think to put salmon in an already rich soup, but it works because it’s such a decadent bowl of comfort food. Your tummy will be happy.
Bay Scallop Ceviche with Mandarin Oranges
I love ceviche. This one is a doozy because there’s almost no chopping required since it uses those adorable petite bay scallops. The mandarin segments lighten everything up while the radishes provide a little nightshade-free heat. Perfect!
Stuffed Bacon Guacamole Burger
Why, yes, I DID make Bacon Green Onion Guacamole… and then stuff it into a pork burger. Because, bacon. And a stuffed burger always beats an unstuffed burger, right?
Arugula, Apple & Bacon Salad with Cranberry Vinaigrette
I love this stuff. It is full of zing because it’s made with fresh cranberries. Just thinking about it is making my mouth tingle.
Chicken with Rosemary & Roasted Oranges
I love this dish for a few equally awesome reasons. It uses only a handful of ingredients, it’s simple, it’s quick and… somehow it manages to transform such basic ingredients into something really amazing. Comfort food that’s good for you!
Paleo Alfredo with Caramelized Leeks & Bacon
I’ve got to laugh, since this is the 4th of my top 10 Autoimmune Paleo dishes that has bacon in it. This is one of my favorite dishes… ever. It’s got sweetness from the leeks, creaminess from the sauce, saltiness from the bacon and the fun of vegetable noodles. SOLD!
Mango Sorbet with Mint
Of course, I had to end with dessert. This is a simple way to make a frozen treat without needing an ice cream maker or hours to spare. Blend this up in about a minute and enjoy!

One of the dishes has zucchini noodles. Since that is a nightshade, what would be a good substitution?

I noticed many wonderful Mexican AIP recipes; except cumin is not a nightshade. 🤗
Cumin isn’t a nightshade, but it is a seed spice, so not included on the AIP elimination phase.
