Leftovers Love: Spinach and chorizo salad with creamy Moroccan spiced dressing

Back when I made this Moroccan spiced poached cod, I saved the poaching liquid simply because it seemed like a complete waste to throw it out. And I’m super glad I did, because it turned out to be the perfect dressing for this chorizo and spinach salad I had for lunch the following day. Win!
