Heat your oven to 400F and while you’re waiting cube up a sweet potato into bitesize pieces. Toss them in some oil and seasonings, then dump ’em out onto a foil-lined […]

Super speedy weeknight shrimp & broccoli

weeknight shrimp

You may have noticed I’m on a broccoli kick. Really, it’s the glorious side effect of broccoli being on sale for less than $1 / lb, muahahaha. Since I needed to use the last of my bazillion-pound purchase, I decided the best way was to roast up the last 1 lb. This dish came about […]

Instagram post 2190233470437919774_192319569 AIP MADE ME (ABLE TO) DO IT // This may look like any other in-car selfie, but beyond my un-brushed hair is the face of a woman in her 30s who could get up at 4 am, wrangle 3 irritated kittens into carriers, drive 3 hours to & from the vet on a road that still terrifies me just a little bit in the dark. And then take a photo to commemorate the experience on the other side because I could do that WITH ENERGY TO SPARE. And also while giving zero Fs about what people might think about my frizzy hair upon arrival 😂
.
15 years ago I was literally dragging myself through the motions of what I thought I "should" be doing. 10 years ago I hated everything about myself & thought I "deserved" to feel that way. 5 years ago I started to feel hopeful that things - that I - could really change. And today, my life couldn't look any more different from where I started. This is what figuring out what works for me, in food, in life, in health, in LIVING looks like. That woman taking a selfie in the parking lot because, damn it, she made it!
.
The beginning of so much of that journey for me started with the AIP elimination phase and rippled out from there into lots of small changes, a little at a time, learning to honor myself as I tentatively took those steps. If you're thinking of taking your own steps, I wanted to give you a heads up that today is the last day to pick up The Essential AIP Resource Library.

Instagram post 2188831586342879917_192319569 GRATEFUL // our power went out early in the morning after Thanksgiving (along with our internet) and may not be back until tomorrow or even later, depending on the weather.

I'm feeling especially grateful that we're able to stay warm inside because of the luxury of a back up generator with a full tank of propane. Many other people out here either don't have that, or are like our neighbor whose generator ran out of gas yesterday. Even if they could have gotten to town along snow-closed unpaved roads, all of the gas stations were without power for their pumps anyway. I'm hoping that those people who aren't as fortunate as we are in this situation won't have to be without electricity or heat for very much longer.

Although we do have this back up in place, we're being careful with our energy consumption, only heating the smallest room in the house that we are holed up in, using minimal water since it has to be pumped from an outside tank into the house. Meanwhile, the temperature in my kitchen is steady at about 55 F and we are lucky enough to both have enough food in our fridge & the electricity to stop it from spoiling as we wait for power to be restored.

Needless to say, the kittens are completely unbothered by all of this. They're just riding it all out in a kitten pile, oblivious.

Instagram post 2188713992336026910_192319569 Sometimes I forget how far I have come.

My life is so much more vibrant these days that I have to pause to remember what it was like to feel so deep in the darkness that I couldn't see even the bright spots.

When I first got my diagnosis, I was a teenager completely on my own, desperately fighting to be heard by a bunch of adults who dismissed everything I said I was going through as merely the "stress" of college.

I don’t remember his face, just the nonchalance of the ancient male doctor who told me I just had to accept being on meds for life, without being able to explain why this was happening to me.

Later that year, I was allowed to have a ten minute break per hour of exam papers during finals and I used the time to alternately nap & cry, because nothing helped & everything seemed hopeless.

I was terrified by the idea that I was going to feel that way forever: lonely, scared and strangely insubstantial. I didn't know that I could ever feel better because nobody told me it was possible. I had no one to talk to about what was happening in my body or my head.

You guys, I can't begin to explain how much of a weight was lifted from me, years later, when I found a community of people who understood how this felt. I finally felt heard. Instead of placated or dismissed.

If that's where you are, you're not alone & it is possible to live well with chronic illness. Right now my friends at Autoimmune Wellness are offering an amazing affordable resource to do just that. It's called The Essential AIP Resource Library & it has everything you could possibly need to get started or stay on your healing journey.

The Essential AIP Resource Library includes:
👉 30+ bestselling ebooks
👉 1400+ recipes
👉 18 weeks of meal plans

Instagram post 2187358816471639701_192319569 Miss Daisy Johnson is especially thankful to be enjoying this day without her cone of shame! She excels at scaring the hell out of me hourly, climbing things she has no business climbing (like, say, THE ROOF) & making even the dullest days joyful because she is never content to let anything be. Except maybe at nap time.
.
I’ll be honest, taking on three kittens out of nowhere has shown me how much more love it is possible to have in my heart, but also the very bottom of my wallet. It’s been tough to make everything work financially with Daisy’s penchant for the dramatic, dangerous and downright gross. (I’m looking at you, cat who barfed worms!) Vet bills and the fear of future vet bills have made for some anxiety riddled days & nights. But today, I’m grateful just to have her home with us. Now if you’d just stop jumping on my counters while I’m attempting to cook, that would be great, Miss Daisy J 😂😘
