It’s funny to think that a few years ago, I detested eggs. This morning I made a totally inauthentic but super delicious version of Machaca Con Huevos, using my paleo shredded beef and scrambling it into a mix of onions, jalapenos and a handful of extra spinach wilting in the back of my fridge. Noms!
My kitchen was over a hundred degrees yesterday. When it’s that icky in there, and when I’ve stopped whining and stomping around the house like a two year old, I either (a) eat a salad “snack plate” for dinner or (b) get out my crock pot. Yesterday I did both!
