It’s funny to think that a few years ago, I detested eggs. This morning I made a totally inauthentic but super delicious version of Machaca Con Huevos, using my paleo shredded beef and scrambling it into a mix of onions, jalapenos and a handful of extra spinach wilting in the back of my fridge.
