It’s funny to think that a few years ago, I detested eggs. This morning I made a totally inauthentic but super delicious version of Machaca Con Huevos, using my paleo shredded beef and scrambling it into a mix of onions, jalapenos and a handful of extra spinach wilting in the back of my fridge. So the leftover sugar snap peas from this post made it into breakfast the next day. Sliced about the same size as some green onion I also threw in, the sugar snap peas kept their crunch and were surprisingly yummy! I’d totally do this again!
